Apple Crumb Cake

Crumble Topping

  • 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup cold butter, diced
  • 3/4 cup apples, peeled and finely diced

Instructions:

  1. In a large bowl, combine flour, sugar, cinnamon, and salt.
  2. Using a pastry cutter or fork, cut in the butter until the mixture is pea-sized.
  3. Stir in the apples. Refrigerate until ready to use.

Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup Sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup sour cream
  • 2 cups apples, peeled and finely diced

Instructions:

  1. Preheat oven to 175°C. Prepare two 9×5″ loaf pans with butter, flour, and parchment paper. Set aside.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In the bowl, beat butter and sugar. Cream until pale and fluffy, about 4 minutes. Scrape down the sides and bottom of the bowl.
  4. Add eggs, one at a time, beating well after each addition.
