Crumble Topping

  • 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup cold butter, diced
  • 3/4 cup apples, peeled and finely diced


  1. In a large bowl, combine flour, sugar, cinnamon, and salt.
  2. Using a pastry cutter or fork, cut in the butter until the mixture is pea-sized.
  3. Stir in the apples. Refrigerate until ready to use.


  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup Sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup sour cream
  • 2 cups apples, peeled and finely diced


  1. Preheat oven to 175°C. Prepare two 9×5″ loaf pans with butter, flour, and parchment paper. Set aside.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In the bowl, beat butter and sugar. Cream until pale and fluffy, about 4 minutes. Scrape down the sides and bottom of the bowl.
  4. Add eggs, one at a time, beating well after each addition.
  5. Add vanilla and mix to combine.
  6. Add one-third of the dry ingredients. Then add in half of the sour cream.
  7. Add another third of the dry ingredients, followed by the remaining sour cream and the rest of the dry ingredients. Mix until just combined.
  8. Fold in the apple chunks.
  9. Divide the batter evenly between the prepared pans. Top each pan with the crumble mixture.
  10. Bake for around 50 minutes, until a toothpick inserted in the center comes out clean.
  11. Let cool for about 15 minutes, then remove cakes from pans. Place onto a rack to cool completely.

  • 2 tablespoons milk


  1. In a small bowl, mix together sugar and milk with a fork until smooth.
  2. Once the cake has cooled, use a fork to drizzle the glaze over the top.
  3. Let rest for 5 minutes for the glaze to set. Slice and serve with a cup of coffee or hot tea.
